The Ischian rabbit is one of the rabbit recipes best that can be prepared. As the name already suggests, the preparation is typical of the island of Ischia, in Campania, and if you happen to drop by, you should definitely order it at the restaurant. In most of the Ischian homes this is an unmissable dish in the classic Sunday menu, where bucatini served with rabbit sauce of fossa (wild rabbit) and parmesan are brought to the table.
While not particularly fond of this type of meat, during my weekend in Ischia this year, I wanted to taste it in a place where they told me it was a real specialty. In fact, every year the tourists of the green island go in search of typical dishes to "lick their fingers" and I am one of them!

How to make Ischian rabbit
Cut the rabbit into large pieces.
Brown the piece of garlic with the chilli in the oil.
Then add the rabbit too.
Meanwhile, prepare the herbs and cherry tomatoes.
After browning and blending the rabbit with the wine, lift the garlic and chilli and start adding the herbs.
Then add the cherry tomatoes, add salt, cover with a lid and cook for about 20 minutes.
After this time, lift the lid and let the sauce reduce.
Your Ischian rabbit is ready to be brought to the table.
