Recipe Zucchini alla scapece di of 27-07-2011 [Updated on 11-05-2016]
Here is another typical recipe of Neapolitan cuisine, the zucchini alla scapece! It is a side dish prepared by frying the courgettes into slices and seasoning them with a marinade made with vinegar, garlic and fresh mint. It is said that the name zucchini alla scapece comes from the Spanish word escabeche, which refers to the preparation of a dish, whether boiled or fried, which is subsequently seasoned with a marinade made with vinegar. In my house this famous Neapolitan side dish is also called "alla witty", but I don't know if it's just a way of saying about my mother and my grandmother or even someone else in Naples calls them that;) Names and derivations apart, if you want to prepare a delicious side dish with zucchini this is the recipe with the doses of garlic and vinegar that we use at my house, but adjust at the moment, because the more or less strong flavor of the marinade depends on personal tastes and the type of vinegar used.
