This spelled with asparagus and carrots is another one of those recipes that I propose to alternate the greedy ideas with the healthier and lighter ones. In recent years I have begun to appreciate this cereal a lot and in addition to soups, I love it in salads. In fact, this dish can be served both hot and cold with salads, for the dressing, needless to say that the choice of asparagus will make the difference, since I tasted the wild ones, I am constantly on the hunt, because I find them much tastier; ) Well, I'll leave you with today's recipe, but we'll read it again later with another little thing, kisses and have a good day!
How to make spelled with asparagus and carrots
Soak the spelled in a bowl of water.
Drain the spelled, rinse it and cook it in a pot of salted water (follow the cooking times indicated on the package).
Meanwhile, clean the asparagus, removing the hardest part of the stem.
Clean and chop the onion and sauté it in a pan with a little oil.
Peel the carrots and cut them into julienne strips, then cut the asparagus into pieces.
Add asparagus and carrots to the pan with the onion, season with salt, pepper and cook for a few minutes.
Drain the spelled a little al dente, and add it to the pan with the vegetables.
Mix well and sauté over high heat for one minute.
Finally add some fresh chopped basil, mix and serve.
